Adam’s Friend’s Burrito Recipe


I wonder how many times I've made these burritos. 

1 onion, chopped
2 Tbsp oil
2 Tbsp chili powder
6 cloves garlic, minced
4 tsp dried oregano
2 tsp cumin
1 tomato, diced
1 cooked, diced sweet potato (can be done in microwave)
2 (15 ounce) cans black beans, drained
1 (14 ounce) can corn, drained
fresh cilantro, chopped
1 red pepper, chopped
4 Tbsp lime juice
10 (10 inch) flour tortillas
1 ½ cup shredded Monterey Jack cheese

Serve with:
  • sour cream
  • salsa
  • guacamole
Preheat oven to 350. Heat oil in pan, sauté onion for 10 minutes, or until golden. Add in remaining ingredients, through lime juice.

Spoon filling onto each tortilla and top with Monterey Jack cheese. Fold bottom edge, then sides, then roll up. Place seam side down in a baking dish. Cover with foil if desired. Bake 30 minutes. Or leave uncovered and bake for 20 minutes. Add desired toppings.
