I wonder how many times I've made these burritos.
1 onion, chopped
2 Tbsp oil
2 Tbsp chili powder
6 cloves garlic, minced
4 tsp dried oregano
2 tsp cumin
1 tomato, diced
1 cooked, diced sweet potato (can be done in microwave)
2 (15 ounce) cans black beans, drained
1 (14 ounce) can corn, drained
fresh cilantro, chopped
1 red pepper, chopped
4 Tbsp lime juice
10 (10 inch) flour tortillas
1 ½ cup shredded Monterey Jack cheese
Serve with:
- sour cream
- salsa
- guacamole
Spoon filling onto each tortilla and top with Monterey Jack
cheese. Fold bottom edge, then sides, then roll up. Place seam side down in a
baking dish. Cover with foil if desired. Bake 30 minutes. Or leave uncovered
and bake for 20 minutes. Add desired toppings.
